Vegetable and Chicken Skewers Recipe
Ingredients

400 gm chicken breasts, 240 gm onion, 240 gm yellow bell pepper, 5 gm oregano, salt as required, 240 gm zucchini, 240 gm red bell pepper, 5 gm powdered black pepper, 150 ml virgin olive oil, lemon wedges as required, bamboo sticks

Cooking Methods

First, dive the bamboo sticks into the water for at least 10 minutes. Then cut the chicken and vegetables. Cut all the vegetables into 1’’ square pieces. Now take a large bowl and put olive oil, salt, crushed black paper, and oregano herbs and mix them well. Then marinate the chopped vegetables and chicken in such a way that all the pieces are coated well. Marinate them not for a long time just for 5-6 minutes.

Preheat the grill or oven. Now take the bamboo sticks and put the chicken pieces and veggies into the bamboo skewers. Cook the skewers on preheated grill or oven as long as the vegetables and chicken are tender. Cook well on both sides and make sure you prevent burning. Garnish with lemon wedges.

Christmas Chicken Biryani Recipe
Ingredients

1 mug of basmati rice, 3 mugs of chicken stock, 2 onions, thinly sliced, 2 mugs of squash, peeled, 2 tbsp curry powder, 1 tsp ground cinnamon, ½ red chilli, 1 tbsp fresh thyme leaves, 2 mugs of leftover chicken, A handful of dried fruit, 1 orange, zest and juice, A large handful of nuts, 4 bay leaves

Cooking Methods

First, prepare your oven to 200°C. Put the pan on medium-high heat, pour oil, and fry the rice for 1 min. Add a pinch of salt and 2 mugs of stock. Then cover the pan, minimize the heat and simmer for 10 mins. Now, drain the rice.

Take another pan and add oil or ghee. Fry the onions to make the onions tender and golden. Then add curry powder and ground cinnamon. Gradually add chilli, thyme, shredded meat, dried fruit, orange zest and juice. Finally and the remaining mug of stock. Boil it for 5-10 mins. Remove from the heat. Now split the nuts over the rice.

Mildly polish the base and sides of an ovenproof frying pan with oil or butter. Put the bay leaves in a pattern in the base of the pan and put half the rice in the base and up the sides of the pan. Then spread the curried meat over the rice. Now put the remaining rice over the curry. Finally, put a doubled-up sheet of greaseproof paper out to fit over the rice to keep all the rice moist.

Bake for 20 mins and then slowly peel the paper off the biryani and place a large platter or cutting board over the pan. Serve warm.

Chicken (Morog) Pulao Recipe
Ingredients

370g basmati rice, 1kg chicken, Fine sea salt, 2 tbsp olive oil or ghee, 5cm cinnamon stick, 4 green cardamom pods, 4 cloves, ½ tsp ground black pepper, ½ tsp ground turmeric, 1 large yellow onion, 4 garlic cloves, 2 tbsp peeled and grated fresh ginger, 2 medium carrots, peeled and diced, 60g green peas, 35g sweetened dried cranberries, 30g whole cashews

Cooking Methods

First, wash and clean the rice properly with running tap water. You need to soak the rice in water for about 25-30 minutes.

Meanwhile, prepare the chicken. Take a pan and put the chicken with 960ml of water and half a teaspoon salt. First, boil them over medium-high heat. After boiling reduce the heat, cover with a lid, and cook for 20 minutes. Now, separate the chicken from the liquid and make the stock to 960ml adding enough water to the stock.

Take another pan. Put half the oil, the cinnamon, cardamom, cloves, black pepper and turmeric, and cook the spices for 45 seconds. Now add the onion and fry until becomes soft and brown in colour. Now add the garlic and ginger, and cook for one minute.

Add the drained rice to the saucepan and fry for three minutes. Then pour the reserved stock with the chicken pieces and add the carrots and peas also. Give in one teaspoon of salt. Cover the pan. Make sure you cook it for about 20 to 22 minutes. Take out from heat and let the saucepan sit covered for five minutes.

Fry the cranberries and cashews, season with salt add the cranberries and cashews to the rice and mix carefully.

Hilsa (Ilish) Fish Curry
Ingredients

500 gm washed & dried, sliced Eilish fish, 1 teaspoon black cumin seeds, 2 pinches salt, 1/2 cup mustard oil, 1 teaspoon powdered turmeric, 4 green chilies, 2 cups boiling water

Cooking Methods

First, clean and slice the fish into pieces. Then marinate the fish pieces with salt and turmeric. Rest the marinated fish for some time. Now fry the marinated fish pieces to make them a golden colour.

Take another pan and fry the cumin seeds and then add the green chillies. Now add the fried fish to the oil. Add the boiled water, salt and turmeric powder also. Cover the pan. Cook for some time.

Slow Cooker Beef Stew Recipe
Ingredients

2 pounds beef stew meat, cut into 1-inch pieces, ¼ cup all-purpose flour, half teaspoon salt, ½ teaspoon ground black pepper, 1 ½ cups beef broth, 4 medium carrots, sliced, 3 medium potatoes, diced, 1 medium onion, chopped, one stalk celery, chopped, 1 teaspoon Worcestershire sauce, 1 teaspoon ground paprika, one clove garlic, minced, 1 large bay leaf.

Cooking Methods

First, clean and fresh the beef stew meat. Put the meat stew beef in the slow cooker. Take a large bowl and mix flour, salt, and pepper together. Pour the mixture over the meat and mix well so that the meat is coated well. Marinate for 20-25minutes.

Now add beef broth, carrots, potatoes, onion, celery, Worcestershire sauce, paprika, garlic, and bay leaf and combine well. Cover and cook in high heat for 4 to 6 hours. You can also cook on Low for 8 to 12 hours.
